Our Farming Process
How We Grow the Perfect Sydney Rock Oyster
At The Perfect Oyster, our farming process is a blend of tradition, patience, and respect for nature. From the first catch to the final harvest, each step is carefully managed to ensure our oysters grow strong, clean, and full of flavour. Here’s how we do it:
Spawning & Catching
During the warmer months, oysters naturally spawn in Wallis Lake. Tiny larvae drift with the tides until they settle on catching slats we’ve placed in the estuary — a process that mimics nature, with a little helping hand from us.
Stripping & Grading
Once the young oysters (called spat) grow to the right size, we gently strip them from the slats and pass them through a water grader. This sorts them by size and helps us manage their growth more evenly.
Mesh Bags & Grow-Out
The oysters are placed into fine mesh bags, allowing clean tidal waters to flow through. This stage is crucial — the oysters feed, grow, and begin to take on the unique characteristics of their environment.
Sun Drying & Natural Cleaning
To keep our oysters healthy, we regularly lift the bags and dry them under the sun. This helps control unwanted growth like barnacles and seaweed — a simple, natural method with great results.
Finishing
In their final stage, mature oysters are placed into their finishing leases. Here, they develop their full flavour, texture, and condition — ready to be harvested at their absolute best.
